Summary Description:
Under administrative direction, plans, organizes, and manages the food service operation of the college cafeteria/snack bar.
Examples of Duties:
Duties may include, but are not limited to the following: 1. Plans, assigns, trains, evaluates, and supervises, the work of cafeteria/snack bar personnel. 2. Checks the quality of food served and inspects the cafeteria/snack bar for proper sanitation and safety standards. 3. Assists in the major cooking tasks in preparing soups and limited menu specials in accordance with prepared menus and established recipes, and other foods that may be used in the cafeteria/snack bar. 4. Assures standardized recipes, approved price schedules and portion controls are followed. 5. Estimates, orders, and prices needed quantities of foodstuffs and other supplies, assures proper storage and authorized use of same. 6. Checks goods received against requisitions and invoices notifying supplies in accordance with established procedures. 7. Supervises the cleaning of the kitchen grill areas, equipment, dining room, and eating utensils. 8. Coordinates with campus Safety Officer about maintaining records and disposal of all chemicals and hazardous materials. 9. Coordinates the set-up and delivery of food and beverage service to various campus sites for special occasions. 10. Maintains, prepares, and reviews various records and reports including payroll and accounts payable. 11. Maintains and prepares a variety of records and reports including daily sales reports, bank deposits, accounts receivable, monthly inventories, audit reports, equipment replacement and repair. 12. Coordinates arrangements with maintenance department for building services, and for work requests for equipment repairs. 13. Prepares written and/or oral reports. 14. Works cooperatively with campus personnel to improve the quality of service and meet the needs of the faculty, staff, and students.
Minimum Requirements:
• Graduation from high school or equivalent. A.A. Degree in food service is desirable.
• At least three (3) years experience in food service, restaurants, cafeterias, snack bars, including food preparation, cooking, baking, ordering, inventorying, scheduling, recordkeeping, and serving of meals.
•Minimum of two (2) years experience in supervision at a management level position including school food service and management level supervision of food service employees.
•Have successfully complete some college level food service courses, such as Food Purchasing, Sanitation and Safety, Quantity Food Preparation; Introduction to Business, and Accounting Principals, Food and Beverage Labor Cost Control.
Desired Qualifications:
Knowledge Knowledge of California Restaurant Act requirements, including hygiene, insect/rodent control, preventing food borne illnesses, and building and facility sanitation; food temperature requirements; cash register operation; change-making; deposits; and cash reconciliation; meal production and planning; quantity food preparation and food merchandising; use and care of institutional kitchen equipment and utensils; principles of supervision. Abilities Ability to motivate employees; keep a positive attitude under stress; effectively communicate with professional staff, students, clients, and vendors; promote cafeteria/snack bar services within the campus community; order and inventory product; train personnel; prepare accounts payable and receivables; and exercise appropriate supervision; read, understand and implement County of San Bernardino Health Ordinances.
Working Hours:
Flexible hours to meet the job demands and needs of the District typically and minimally by working Monday-Friday 8:00am to 5:00pm.
Salary and Benefits:
$47,348.00 to $57,549.00 per year plus family medical, dental, vision coverage, and employee life insurance (employee contribution dependent upon plan selected). PERS Retirement (employee contributes 6% or 7% depending on current membership status).
