Assists in developing, evaluating and testing district menus, serving guides and recipes with the intent of recommending innovative menu items to students that meet nutrition, USDA and State guidelines and promotions.
Evaluates nutritional content and performs cost analysis of menu items to develop specifications for food items to be purchased.
Advises food service staff, faculty, nurse, and administrators on meeting dietary needs or restrictions and ensures meals are provided to students with special dietary needs, including food allergies and medical conditions.
Establishes reporting and disclosure procedures for students with special dietary needs to ensure proper oversight is being maintained and needs are met; develops procedures to ensure compliance with federal regulations.
Assists with the bid language and specification for all food items and collaborates with the District Office staff to ensure purchasing process and procedure is followed.
Assists with the use of, and participation in, the USDA commodity program to ensure entitlement is properly utilized in the menu planning process.
Collects data, prepares and maintains a variety of records including menu production worksheets, product specifications and cost data reports, and creates presentations and reports.
Supervises food service programs, schedules the work of and evaluates the performance of assigned kitchen staff, and provides support to management.
Works directly with kitchen staff regarding food preparation procedures and requirements.
Prepares grant application packets used to apply for State, Federal, and related nutrition program funding.
Collaborates with food service administration to implement, administer, and evaluate district-wide nutrition education programs.
Assists with training staff on standardized recipes, meal patterns, portion control, and production factors that meet Federal and State menu compliance.
Provides nutritional information and guidance, to include developing and providing effective communication that supports Food Services’ goals to promote nutrition literacy and physical activity to District personnel, students, parents, and the community.
Serves as a representative of the Food Services Department at meetings, and may serve as a liaison to other departments.
Organizes and performs food demonstrations and taste testing with stakeholders.
Drives to and visits assigned schools.
Attends food shows and workshops to learn about and evaluate new products and equipment.
Job Summary
Under direction, develops, plans and prepares menus and menu specifications, establishing and monitoring quality control procedures to ensure sanitary and safe food preparation to meet student acceptability and USDA and State guidelines; performs nutritional analysis and cost studies of proposed menu offerings and menus for special dietary needs; implements and monitors comprehensive nutrition education programs to provide nutritional guidance to students, parents, and food service staff; and performs other related duties as assigned.
Essential Duties
Education and Experience: A bachelor’s degree from an accredited college or university in nutrition, dietetics, food management, or a related area and one year of experience performing analysis of nutritional content and menu planning are required.
LICENSE: Must possess and maintain a valid Class C California Driver License and remain insurable at the standard insurance market rate. Must possess (or obtain within six months of employment) and maintain: a valid California Food Safety Certificate; a Food Handler’s certificate issued by an authorized agency and approved for California; and certification as a Registered Dietitian.
Knowledge of:
- Applicable local, State, and Federal laws, regulations, and procedures as they pertain to the National School Lunch, School Breakfast, Afterschool Snack, and Child and Adult Care, and Summer Meal programs.
- Advanced principles of nutrition analysis and related dietary guidelines.
- Methods of adjusting and extending recipes.
- Principles, procedures, methods, and strategies of organization, supervision, training, and management.
- Principles of safety and sanitation and HACCP Food Safety System.
- Basic computer systems and use of computer software applicable to nutritional analysis programs.
- Correct English usage, proper grammar, spelling, punctuation and vocabulary to prepare basic reports and communicate effectively with students, parents, and staff.
Ability to:
- Communicate effectively both orally and in writing, to include speaking to groups.
- Operate office and computer equipment and job-related software applications.
- Plan, coordinate and implement a comprehensive nutritional training program.
- Motivate students to adhere to proper nutritional standards and develop parental support.
- Develop effective working relationships with staff, students, and the public.
- Use tact, patience, and courtesy when interacting with others.
- Meet schedules and timelines.
PHYSICAL DEMANDS
Hearing and speaking accurately to exchange information in person or on the telephone; clarity of voice to give clear instructions and oral presentations; seeing to monitor food quality and read a variety of materials; sitting and standing for extended periods of time; lifting, carrying, or moving objects, weighing up to 30 pounds; dexterity of hands and fingers to operate a computer keyboard; bending at the waist, kneeling or crouching.
WORKING CONDITIONS
Working in a variety of office, kitchen and cafeteria locations throughout the district; exposure to a wide range of temperatures.
