ABOUT THE JOB: The person in this position will work 8 hours per day, 12 months per year, from 6:30 A.M. to 3:30 P.M. Under general direction, manages, inspects, and reviews food service operations programs at an assigned group of schools and offices; assures adherence to laws, standards, and district guidelines. Evaluates taste and artistic presentation of food being served. Trains, supervises, evaluates, and participates in the development and marketing of creative campus catering programs. Performs related duties as assigned.

BASIC FUNCTION: Drives to and visits assigned school food service operations to observe methods, practices, and procedures to assure compliance with laws, regulations, and policies; evaluates effectiveness of equipment utilization, workload, and menu planning; suggests improvements in food preparation methods; provides training and assistance to site managers and cafeteria personnel in effective supervisory training, and evaluation techniques, evaluates work performance of food service managers at assigned sites; trains and oversees managers in writing and conducting evaluations for subordinates; participates in disciplinary meetings, as necessary; participates in developing and implementing marketing strategy for available campus catering opportunities; uses creativity to develop new recipes, facilitate the exchange of ideas, techniques, and recipes among district kitchen sites; oversees the set up and progress of catered events, including evening events; attends food shows to learn about and evaluate new products, ideas, methods, and equipment for food preparation and presentation.

EMPLOYMENT STANDARDS

Education and Experience: High school graduation or equivalent, and college coursework in commercial nutrition service operations. Three years of supervisory experience in a school food service program or in a large institutional kitchen is required. A bachelor’s degree in nutrition, quantity cooking, or food service management may be substituted for one year of the supervisory experience. An associate’s degree in a related field and/or a credential or certification in a Child Nutrition Program are desirable.

License and Certificate: Must possess and maintain a valid Class C California Driver License and remain insurable at the standard insurance market rate. Candidates must submit a recent (within the last 30 days) original DMV driving record by the oral rating exam. Must possess and maintain, a valid California Food Safety Certificate. New appointees must obtain the required certificate within 90 days following appointment.

A SUCCESSFUL CANDIDATE REQUIRES THE FOLLOWING….

Knowledge of: Current methods and practices used in large scale food preparation, including foods and products; current laws and regulations relative to National School Lunch, School Breakfast, Afterschool Snack and Summer Meal Programs, and campus catering programs, sanitation and employee safety regulations; proper equipment utilization, maintenance, and minor troubleshooting, including computerized point-of-sale equipment and basic computer systems and related software applications.

Ability to: Supervise, train, and evaluate effectively, as well as establish and maintain effective interpersonal relationships with district administrators, other employees, and vendors. Evaluate taste, appearance, and quality of food items; compile and maintain accurate spreadsheets and other financial records, including computerized reports, and learn new computer applications for various food services, as they become available; and write and speak effectively, using tact and diplomacy.
