Under the supervision of the Director of Business Services, to supervise and maintain a school cafeteria; to direct the cooking, baking, preparing and serving of foods; to place orders in a timely manner; to unload and store all deliveries on time; to prepare written reports and keep records for free/reduced priced meals; and to perform related work as required.
Duties and Responsibilities
- Supervising of personnel in a school cafeteria
- Receiving general guidelines and instructions but having a high degree of latitude in selecting work methods to ensure the timely use of foods, modification of menus to maximize use of existing foods, compliance with federal nutritional standards, compliance with sanitation standards and serving of foods on a strict deadline.
- Planning, assigning, supervising and participating in the preparation, cooking, baking and serving of foods.
- Complying with all federal and state regulations related to food services and lunch/breakfast programs. Complete and file necessary reports related to such programs, including soliciting and maintaining Free/Reduced lunch counts and meal counts and records.
- Maintaining adequate procedures for the receipt of monies collected in food services; their accuracy and timely deposit.
- Preparing nutritional food cominations and work from monthly menus; modifying menus as needed.
- Maintaining cafeteria fund expenditures within a defined budget.
- Training new personnel.
- Preparing and selling food to faculty members.
- Ording food products and keeping necessary records; ordering paper goods.
- Preparing foods for and serving at special functions.
- Supervising cleaning of snack bar, cafeteria, equipment and eating utensils.
- Checking quantities and condition of food upon arrival.
- Taking inventories of foods and supplies in cafeteria.
- Keeping records; Keeping computerized records.
- Preparing and collecting written reports.Collecting and preparing money for banking
- Ensuring that safety and sanitation standards are observed by personnel.
- Inspecting food for quality, proper storage and appetizing serving methods.
- Performing related work as required.
Qualifications
Knowledge of:
- Principles of good nutrition, including federal standards.
- Methods of preparing, cooking, and serving foods and maintaining cafeteria facilities in a safe and sanitary condition.
- Basic mathematics
- Principals of supervision and training
- Record keeping techniques
- Appropriate safety practices
Ability to:
- Supervise and train an assigned staff
- Maintain safe and sanitary working conditions
- Plan nutritious menus
- Prepare large quantities of food in a nutritious and palatable manner
- Operate equipment found in school cafeterias
- Requisition foods and supplies
- Handle money and keep accurate records
- Operate a vehicle observing legal and defensive driving practices
- Understand and carry out oral and written instructions
- Establish and maintain effective working relationships with those contacted in the course of work.
- Attempt to create meals that meet state standards and align with the needs and desires of students.
Training and Experience
Any combination of training, education and experience which demonstrates possession of the knowledge and abilities stated above and the ability to perform the duties of the position. A typical qualifying entrance background is supervisory-level experience performing volume food service and preparation duties, perferably for public agency.
Physical Environment
May be required to use personal vehicle in the course of employment for required meetings.
May be required to wear protective apparel, including face protector and aprons.

Light Work:
- Lifting, pushing and/or pulling objects weighing up to 60 pounds.
Mobility:
- Positions in this class require mobility of arms to reach and dexterity of hands to grasp and manipulate small objects.
Vision:
- Positions in this class require vision (which may be corrected) to read small print.
Required License
Possession of a valid and appropriate California Driver's License.
Work Year
12-month
