The Chef & Kitchen Manager cooks and leads the preparation of healthy, daily meals and snacks for students school-wide. Prepares healthy and appealing menu recipes to meet student acceptability, including recipes for special dietary needs. This position reports to the Director of Operations and Finance and supervises kitchen staff. DUTIES AND RESPONSILBIITIES 1. Researching, developing, adjusting, implementing and evaluating recipes to ensure compliance with federal and state nutrition guidelines. 2. Supervising, coordinating, and when necessary, participating in the preparation of cooking, baking, and other phases of food preparation according to approved menus; 3. Training, evaluating, and preparing work schedules for subordinates; 4. Supervising the maintenance of kitchen and equipment; 5. Preparing requisitions for and conducting inventories of food supplies; 6. Developing and implementing policies and procedures regarding appropriate methods of cooking, cleaning and maintenance according to Federal, State, and Local Health and Safety regulations. QUALIFICATIONS 1. Knows the methods and techniques of overseeing and managing kitchen techniques and food safety lessons, activities and training methods. 2. Knows, or is willing, to learn the federal and state regulations as they apply to child nutrition programs. 3. Knows the federal and state health and safety regulations as they apply to food preparations and services. 4. Knows the methods and practices of sanitary food-handling and storage 5. Knows the techniques of record-keeping and cost accounting 6. Ability to research techniques, methods and procedures EDUCATION, TRAINING AND EXPERIENCE • AA or BA/BS In Culinary/Meal Preparation and Professional Cooking or related field, required • ServeSafe Manager Certification, required • At least 5 years of experience working in a school or commercial kitchen • At least 2 years of experience managing a school or commercial kitchen operations
