ABOUT THE POSITION

Long Beach Community College District is currently seeking one full-time tenure Culinary Arts Professor commencing with the fall 2022 semester. The primary teaching assignment involves instructing culinary and baking courses ranging from Safety & Sanitation, intro to culinary skills & principles, buffet and catering, culinary skills for baking students, Word Cuisines: Asian, Mediterranean, and The Americas, and other Culinary related courses. This assignment also includes curriculum development, participation in the shared governance process through work in normal professional activities, committee work, and student activities. The teaching assignment may be at the Liberal Arts campus, the Pacific Coast campus or other college teaching locations. The assignment may be day, evening, weekend, on-line or off campus and is subject to change as needed. Faculty positions offer the opportunity to assist a diverse group of adult students in achieving their educational goals. Qualifications

 

Minimum Qualifications

 

• Bachelor's degree and two years of professional experience, OR, an Associate degree and six years of professional experience, OR meet equivalent qualifications established by the District, AND

• Evidence of a sensitivity to and understanding of the diverse academic, socioeconomic, cultural, disability, and ethnic backgrounds of community college students.

 

Desirable Qualifications

 

• Educational and/or instructional preparation in Culinary Arts and Baking & Pastry Arts.

• A minimum of three years of recent experience teaching Culinary Arts at the post-secondary level.

• Evidence of student success in teaching Culinary Arts.

• Evidence of participation in student success initiatives in post-secondary setting.

• Evidence of the ability to effectively engage with and facilitate authentic learning for students of diverse backgrounds, cultures, and experiences.

• Evidence of an ability to adapt teaching pedagogy to the knowledge level (developmental through transfer) and personality of each individual and class.

• Evidence of an ability to self-reflect and respond to an evidenced-based assessment of student learning.

• Evidence of innovation, scholarship, or leadership in the teaching of Culinary Arts.

• Evidence of teaching related to the traditional methods and industry standards of Culinary Arts.

• Desire and demonstrated ability to participate actively in department, division, and college committees and in the shared governance of Long Beach City College.

• Desire and evidence of an ability to take on leadership roles both within the department and in the institution as a whole.

• Commitment to the Mission and Strategic Objectives of Long Beach Community College District.

• Ability to work with computers, and use the Internet and interactive technologies to engage students in on-campus and on-line courses, and intrinsic motivation and ability to develop and teach on-line courses (where academically appropriate).

• ServSafe Food Protection Manager certified and have extensive, detailed functional knowledge of the food service industry (e.g. hotel, resort), restaurant kitchen management, and current culinary trends.

• Two years of related work experience in the supervision and management of food preparation and food service facilities.

• Thorough functional knowledge of equipment, facilities, procedures, food safety and sanitation, and personnel practices in the culinary field.

• Work experience in a retail or wholesale food environment.

• Work experience providing banquet services from contract to clean-up, including menu planning and food cost calculations.

• Experience with Hospitality Operation, Purchasing & Cost Control, and Baking & Pastry Arts.

• Bilingual in one additional language, such as: Cambodian, Korean, Spanish, French, or Vietnamese.

• Ten (10) years of full-time, hands-on experience in commercial/industrial kitchens (e.g. Luxury Hotel, Fine-Dining Restaurant) in several different positions in the Escoffier Kitchen Brigade (e.g. Entremetier, Garde Manger, Tournant, Rôtisseur, Poissoiner, Saucier, Chef de Partie, Sous Chef de Cuisine, Chef de Cuisine, Executive Sous Chef, and Executive Chef).
