ASSISTANT DIRECTOR, NUTRITION SERVICES
DEFINITION
Assists in planning, organizing, directing, and reviewing the nutrition services operations in the school district.
DISTINGUISHING CHARACTERISTICS BETWEEN RELATED CLASSES
An Assistant Director, Nutrition Services assists the Director, Nutrition Services in the administration of the food service operations.
The Director, Nutrition Services is the administrator responsible for all of the activities of the nutrition services operations in the Glendale Unified School District.
A Supervisor, Nutrition Services monitors, inspects, and reviews operations in production kitchens and school cafeterias, including preparation, transportation, and serving of National School Lunches and Breakfasts, a la carte foods, salad and snack bar items; implements and coordinates computer programs, including installation, training, troubleshooting, and repair; recommends equipment or operational changes.
SUPERVISION RECEIVED AND EXERCISED
General supervision is received from Director, Nutrition Services.
Functional and technical supervision is exercised over nutrition services personnel in the various cafeterias and the administration offices.
MAJOR DUTIES AND RESPONSIBILITIES
Assists the Director, Nutrition Services in:
Planning, organizing, and supervising nutrition services programs in District schools and facilities to achieve District and Department mission, goals, and performance measures consistent with federal, state, and District laws, policies, rules, and regulations.
Developing and facilitating in-service training for Nutrition Services Department staff and District personnel as requested; providing assistance to Cafeteria Managers to resolve problems and to coordinate activities.
Supervising all Nutrition Services Department operations during the absence of the Director, Nutrition Services; selecting, training, directing, coordinating, and evaluating assigned staff.
Providing nutritional information regarding Nutrition Services menus to Health Services staff.
Collaborating with the Director, Nutrition Services, instructional services personnel, principals, District department heads, and parents to promote nutrition education and design a sustainable Wellness Policy for the District.
Developing and directing menu planning for regular and special programs maximizing the use of commodity dollars; conducting research; and analyzing data regarding nutritional adequacy and assuring compliance with government regulations.
Preparing and testing standardized recipes; training staff on preparation of standardized recipes, portion control, production factors, and USDA meal patterns that affects menu compliance; providing standards for quality of foods prepared and served.
Preparing and implementing special diets as requested; ensuring meals provided to children with special dietary needs, including food allergies and medical conditions, meet dietary restrictions; instructs Nutrition Services Department staff on food preparation to ensure instructions are implemented.
Developing proposals for State nutrition grant and other grant funding.
Updating and maintaining nutrient analysis software program and nutrition information on Department’s website and at school sites.
Advising and providing nutrition-related materials to District employees, students, parents, and the community; participate in community activities relating to the Nutrition Services program.
Representing the Nutrition Services Department at meetings as required.
Maintaining and evaluating the functions of various cafeterias by visiting sites regularly.
Selecting and placing nutrition services personnel; counseling cafeteria managers and field supervisors in methods of employee performance evaluation and disciplinary procedures.
Coordinating the receipt, storage and delivery of commodities including ordering, tracking, monitoring and diversion of surplus.
Determining new equipment standards and specifications; testing food and equipment.
Perform related duties as required.

Learn and implement federal and state laws and regulations relating to the National School Lunch Program.
Lift heavy objects up to 50 pounds.
EMPLOYMENT STANDARDS
Minimum Requirements:
Three years of nutrition service managerial experience, including responsibility for recommending program changes and improvements.
Be insured and maintain vehicle liability and property damage insurance.
Desirable Qualifications:
Graduation from an accredited college or university with a bachelor’s degree in supervision, business management, nutrition, dietetics, institutional management, food production, or public health.
Nutrition service experience in both the elementary and secondary school levels.
Written and oral proficiency in a second language.
License:
Possession of a valid state of California Class C driver's license and use of a personal vehicle to visit work sites and attend meetings. Be insured at standard vehicle liability and property damage insurance rates, and maintain insurability.
CONTINUING EDUCATION/TRAINING REQUIREMENTS
Each year, at least 12 hours of annual continuing education/training including topics such as:
Administrative practices (including training in application, certification, verification, meal counting, and meal claiming procedures).
Any specific topics required by the USDA, Food Nutrition Services, as needed to address program integrity or other critical issues.
The required continuing education/training will be paid for by the district and is in addition to the food safety training required in the first year of employment.
