Job Description / Essential Elements:    Print   

Under the direction of the Director of Food Services, plan, organize, supervise and participate in food service operations at a production kitchen food service operation; assure proper quantities and quality of food is maintained for food service at the school site and assigned District satellite kitchens; ensure Child Nutrition Programs and menus comply with applicable State and Federal regulations and nutrition standards; train, assign and provide work direction to assigned personnel. Assists in developing and implementing the District Nutrition Services cycle menus and product offerings; oversee compliance with USDA and State Nutrition Standards; confirm product availability with vendors, and recommend food and supply items for purchase including USDA Foods; assists in analysis of nutrition content of menus; ensure meals are provided to children with special dietary needs including food allergies and medical conditions. Plan, organize, supervise and participate in food service operations at a production kitchen food service operation; manage, coordinate, and order food and supplies for special catering functions; assure the serving and storage of food is in accordance with established guidelines and procedures; oversee the production and distribution of food to District satellite kitchens. May be designated to act as a Director of Food Services during brief absences.  Collaborate with Director of Food Services to develop and implement district-wide nutrition policies; draft policies and procedures; recommend strategies to improve school meals and increase student participation. Oversee serving of meals to students, teachers and other staff at an assigned school site; participate in food serving and preparation of main entrees as needed; assure compliance with serving size requirements. Train, supervise and evaluate the performance of assigned staff and student helpers; assists in interviewing and selecting candidates for employment in Nutrition Services; prepare work schedules and assign duties for assigned personnel; provide input on discipline and other personnel related matters as directed by the Director of Food Services; prepare and maintain related payroll records according to established procedures. Estimate and order food quantities from District warehouse and local retail food service establishments; receive, inspect, verify and accept delivery of food and supplies; utilize proper methods of storing foods. Assure proper cleanliness and maintenance of equipment and supplies used in the cafeteria; assure compliance with safety and sanitation regulations. Prepare and maintain a variety of reports and records including inventory, orders, daily reports, menu planning and production sheets. Assure accuracy of daily cash receipts; count and wrap money; prepare bank deposits; prepare daily report of meals served.  Operate a variety of office equipment, including a computer and assigned software programs, and machines used in a school cafeteria as required; drive a vehicle to assigned satellite school serving locations to assure proper operation and food service.  Process meal applications and issue meal tickets in accordance with established guidelines and procedures; maintain compliance with processing and handling of confidential free and reduced meal applications.  Attend meetings related to food service operations and activities.  Perform related duties as assigned.

Education/Experience: Graduation from high school (or GED equivalent) and possession of an Associate's degree with at least twelve (12) units in community college course work related to nutrition services, such as meal planning, nutrition or sanitation. Knowledge/Abilities: Knowledge of operations of a production kitchen; principles and methods of quantity food service preparation, serving and storage; standard kitchen equipment, utensils and measurements; methods of computing food quantities required by weekly or monthly menus; sanitation and safety practices related to transporting and serving food; record-keeping techniques; principles and practices of administration, supervision and training; interpersonal skills using tact, patience and courtesy; operation of standard office equipment. Ability to plan, organize and oversee food service operations at an elementary school production kitchen or high school satellite kitchen; estimate food quantities and requisition proper amounts for economical food service; operate standard cafeteria equipment and appliances; operate standard office equipment; train, supervise and evaluate personnel; maintain records and prepare reports; add, subtract, multiply and divide quickly and accurately. Ability to understand and follow oral and written directions; work independently with little direction; establish and maintain cooperative and effective working relationships with others; meet schedules and time lines; communicate effectively both orally and in writing. Licenses/Other: Certification as a Registered Dietitian (R.D.) or School Nutrition Specialist (SNS) with the School Nutrition Association is desirable. A valid California driver’s license and insurability by the district’s auto insurance carrier must be maintained at all times during employment with the district.
