TUSTIN UNFIED SCHOOL DISTRICT NUTRITION SERVICES ASSISTANT I Range 10 DEFINITION: Under the supervision of the Cafeteria Supervisor I, prepares a variety of food in quantity for delivery to schools; performs a variety of difficult and complex food production tasks; and performs related as required. ESSENTIAL DUTIES: • Participates in the more specialized preparation and/or serving of foods, including assistance with main dishes and baked goods, vegetables, salads, desserts and other dishes. • Assists in requisitioning, receiving and storing of foods and supplies; estimates quantities of food and supplies required. • Maintains proper care, maintenance, and adjustment of specialized equipment. • Responsible for sanitation of large and small utensils, and production equipment. • Assists in inventory and maintaining necessary records. • Serves food at a school site when needed. • Performs cashiering duties; collects, sorts, counts and marks lunch tickets manually or uses Point of Sale (POS) computer system; counts and records daily cash receipts; totals daily sales; prepares manual or automated daily cash, sales and ordering reports. • Assures compliance with kitchen sanitation and safety procedures and regulations; maintains food quality standards including appearance and nutritional requirements; analyzes operations and recommends improvements. • Prepares flow of products from ovens to serving areas and transportation carts to assure timely service. • Cleans serving counters, carts, pots, pans, food containers, tables, chairs and other nutrition service equipment and areas; assists with washing and drying dishes and utensils as needed. • Assists with food preparation and service at special events as assigned; travel to other school sites to assist nutrition service staff as needed. • Operates a variety of standard and production kitchen equipment. • Performs related tasks as required. QUALIFICATIONS: Knowledge of: • Methods of preparing and serving food in large quantities. • Sanitation practices related to preparing, handling and serving food. • Storage and rotation of perishable food. • Basic food preparation including washing, cutting and assembling food items and ingredients. • Basic math and cashiering skills. • Basic record keeping techniques. • Operation and maintenance of nutrition service equipment. • Health regulations and safe working methods and procedures. • Proper lifting techniques. • District policies, rules and regulations. Ability to: • Prepare and serve food in accordance with health and sanitation regulations. • Operate and maintain nutrition service machines and production equipment safely and efficiently. • Observe and follow health and sanitation requirements. • Maintain nutrition service equipment and areas in a clean and sanitary condition. • Wash, cut, slice, grate, mix and assemble food items and ingredients. • Assure that food items are prepared, served and stored properly. • Perform cashiering duties and make change accurately. • Meet schedules and time lines. • Maintain records. • Observe safety regulations. • Work cooperatively with others. • Understand and follow oral and written instructions. Education/Training/Certification: • High school graduate or equivalent. • One year experience in the operation of school cafeterias and preparing and serving food desirable. PHYSICAL DEMANDS (cont’d): While performing the duties of the job, the employee is regularly required to use hands to finger, handle, or feel objects, tools, or controls and talk and/or hear. The employee frequently is required to walk or sit. The employee is occasionally required to stand; reach with hands and arms; climb or balance; and stoop, bend, twist, kneel, crouch, or crawl. The employee may regularly lift and/or move up to 50 pounds. This type of work may involve carrying, lifting, pushing or pulling moderately heavy objects, ascending and descending step ladders, stairs and ramps, and will involve walking or standing for extended periods. Performing in this capacity may also require exposure to cold conditions due to the need to store, remove, and inventory food supplies in freezer storage. Working conditions may include regular exposure to fumes, dust, odors, cleaning agents and chemicals. Exposure to hot, cold, wet, humid, or windy conditions caused by weather may also occasionally be experienced. Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perception and the ability to adjust focus.
