BAKER Definition Under general supervision, performs skilled, large quantity baking in preparing and baking bread, pastries and cookies in a school cafeteria; assists in maintaining food production areas in a sanitary and orderly condition; performs related duties as required. Essential Duties 1. Bake cakes, pies, cookies, pastries, bread and rolls. 2. Prepare desserts and other food. 3. Measure, weigh and mix ingredients. 4. Keep accurate records of quantities used and ingredients needed in accordance with menus. 5. Increase or break down recipe elements to produce a specified quantity of food. 6. Clean and store cafeteria equipment and food supplies and work area. 7. Help cashier and count money. 8. Assist on serving line. 9. Instruct helpers or new personnel in methods and procedures of tasks assigned. 10. As assigned, perform cooking and general kitchen duties. 11. Perform the work of Food Services Worker. 12. Assist with wrapping, packing and loading of food for transport to satellite serving kitchens. 13. Assist with inventory. 14. Operate mixer, slicer, grinder, oven and other equipment common to a production kitchen. Desirable Certification Individuals with appropriate certification from the California School Food Service Association may be given preferential treatment in the competitive employment process for this classification. Appropriate certification will include courses in orientation to school food service, sanitation and safety, and work improvement. Minimum Qualifications Knowledge of proper methods of preparing and baking bread and pastries in large quantities; kitchen sanitation and safety precautions; operation, cleaning and caring for utensils and equipment; basic math and weights and measures. Ability to prepare and skillfully bake bread and pastries in large quantities; plan and organize dessert preparation and serving operations to meet fixed schedules; increase or break down portions of recipes; add, cashier and make change quickly and accurately; understand and carry out oral and written directions; work cooperatively with those contacted in the course of work. Experience One year of full-time experience in the baking and serving of food stuffs in a cafeteria or restaurant or two years at or equivalent to the level of Food Service Worker in the Kings Canyon Unified School District. Education High School Diploma or equivalent. License Valid California Drivers License PHYSICAL DEMANDS: The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job. The employee must occasionally lift and/or move up to 50 pounds such as milk crates, frozen foods, canned food, push fully loaded food carts, etc. Specific vision abilities required by this job include close vision, and depth perception and peripheral vision and color vision. Employees may also be required to have skin contact with detergents, abrasives and cleaning solvents and disinfectants.
